I'm not sure where you heard that you can get Windows 10 IoT Enterprise with SA for $50/device - but it sounds like incorrect info to me. Windows 10 IoT Enterprise is an operating system specifically designed and optimized for Embedded / IoT scenarios i.e.: retail, medical, ATMs, gaming, industrial automation, and others. Since the NUCs don't come with any OS license, you will have to license the NUCs (or any device without a "qualifying OS" ) with Windows VDA per device (or Windows VDA per-User if you qualify).

I guess what I'm asking is can we purchase Windows 10 IoT Enterprise under SA for $50/device/year and install it on our NUCs and be license compliant for VDI? Windows 10 IoT Enterprise is the latest operating system offering for embedded and IoT devices. Since these NUCs don't come with any Microsoft OS or licensing, would it be possible to purchase Windows 10 IoT Enterprise under software assurance to allow them to connect to our virtual desktops and be license compliant? I've read that Windows 10 IoT Enterprise under SA is $50 per device/per year where the VDA license is $100 per device/per year and we would still be stuck with finding an OS that we can use to connect. We have decided to go with the Intel NUC for a hardware solution because of its versatility (it can be a thin client or full blown desktop). In this new release, there will be WPA3 H2E standards support for enhanced Wi-Fi security.We are planning on rolling out VDI in our company and we are in the process of testing thin clients. With Windows 10 IoT Enterprise, version 21H2 there is additional GPU compute support in the Windows Subsystem for Linux (WSL) and Azure IoT Edge for Linux on Windows (EFLOW) deployments for machine learning and other compute intensive workflows.
